Minty Lamb burgers with feta
It’s barbeque time and
here’s a sizzling recipe
that will give burgers a
delicious twist. Though
the English weather
may be unpredictable,
these are sure to come
out a treat every time –
whether you cook them
outside in the sunshine
or inside under the grill.
Makes 4, ready in 30
minutes (+30 minutes for
chilling)
500g lamb mince A few sundried tomatoes
1 small red onion, fi nely diced 1 egg
1 tsp fresh mint, chopped Salt and pepper
75g feta cheese
Combine the mince, onion and egg in a large bowl. With scissors, snip the sundried
tomatoes into small pieces and crumble the feta cheese, before adding to the bowl.
Sprinkle in the mint and season well, giving a good stir.
Next, it’s time to get your hands dirty. Mould your mixture into balls and squash,
making four burger shapes. Wrap these in cling fi lm, then pop into the fridge for half
an hour so that they keep their form whilst cooking.
Get the barbeque ready for cooking, or heat the grill to a medium/high temperature
and cook the burgers on a rack for around twenty minutes, turning once, until they are
cooked through.
Pat them with kitchen roll before serving between ciabatta or good quality rolls with
fresh green salad and wedges of lime.
For a tasty burger relish, combine a little diced red onion and cucumber with several
large dollops of mango chutney, a good splosh of lemon juice and a sprinkling of
parsley. Alternatively a chilled raita (yoghurt and mint dressing) will complement these
perfectly.
