Café F R I D A Y S A T U R D A Y BREAKFAST

Egg McMuffins » Bacon » Eggs » English muffins » Cheddar » Salsa » Coffee with fresh cream

Notes: This breakfast is why some people go camping. If you expect cool weather overnight you can crack the eggs into a water bottle at the put-in on Friday and not worry about breaking eggs when you hang your food pack.

LUNCH

Garden Sandwiches » Fresh bread » Cucumber » Avocado » Cream cheese » Apples

Notes: Save the leather-like salami and hard cheese for your next expedition. The cream cheese will last a week in a pack. Slice the bread at home and pack it in two three-sided cardboard sleeves cut from a box.

DINNER

Spuds and Sausages » Buns » Frozen Oktoberfest sausages » Potatoes » Onions » Brownie mix » Tetra-Pack Syrah/Shiraz red wine

Notes: Pre-slice your potatoes and onions at home and pack them with salt and pepper and dollops of butter in fist-sized bundles in double-layered tin foil. When you pull into the campsite late just throw the packets on the grill with your newly thawed sausages and open the wine.

42 EARLY SUMMER 2009

Pesto Pasta » Linguine noodles » Pesto » Freshly grated Parmesan cheese

» S’mores

Notes: Pesto is heavy, but it’s only day two so don’t skimp. To prevent an explosion, pack the pesto bag in a plastic jar (peanut butter container). Sauté the fresh fish you caught before dinner in a hot pan with butter for a side dish (take some olives for an emergency substitute).

MIKE PAYNE planned and led gourmet wilderness canoe trips for Wanapitei Canoe. S U N D A Y

Pancakes » Complete pancake mix » Maple syrup » Fresh fruit » Yoghurt » Coffee with fresh cream

Notes: Even in hot weather the yoghurt will be fine into day three, so don’t go without fresh dairy today (especially since your cream could be chewy this morning). Try maple syrup in your coffee instead of refined sugar.

Lox of Love » Smoked salmon » Cream cheese » Capers, red onion, lemon, pepper

» Bagels

Notes: Smoking is a time-honoured preservation technique, so as long as your salmon is properly smoked or cured and vacuum-packed, you don’t have to worry about spoilage.
