chocolate and gingerbread tiramisu


White


Make a statement with your Christmas menu this year with this showstopping dessert


Ingredients


For the tiramisu • 400g mascarpone • 400ml Elmlea double cream • 175g sponge finger biscuits • 125g sugar • 3 medium eggs • 100g Morrisons ginger nut biscuits • 150g Morrisons white chocolate for cooking


• 50ml coffee liquor (optional)


For the garnish • 1 packet of mini gingerbread men • 1 packet of white chocolate stars • Ground cinnamon for dusting


Method


1.Warm 100ml of Elmlea double cream and 25g of the sugar in a small pan. When warm, add 120g of the white chocolate and stir until chocolate melts.


2.Whisk the egg and remaining sugar in a bowl. Slowly add the cream mixture to the egg, whisking continuously.


3. Take another mixing bowl and whip the cream with the remaining sugar until light and fluffy, carefully fold in the mascarpone.


• 300ml coffee (3 tbsp of coffee granules and 300ml of boiling water)


4. Mix warm coffee and coffee liquor in a deep tray. 5. Crush ginger nut biscuits with a rolling pin. 6. Dip the sponge finger biscuits into the coffee and then place in the serving dish (a glass dish works well so you can see the layers) to cover the base, sprinkle a 1/3 of the crushed biscuits over the top, carefully add 1/3 of the mascarpone mix over the biscuits and repeat two more times finishing with a nice smooth layer of the mascarpone mixture.


7. Place in the fridge for at least two hours to set. 8. Before serving, dust the top of the tiramisu with the ground cinnamon and decorate with the white chocolate stars and the mini gingerbread men. 9. Finally, grate the remaining white chocolate over the top.
