What qualifications do you need? VVhen I started it was City and Guiids qiiaiificatiohs, aithough today there are NVQs Leveis 1-3 which you can obtain to give you a good start' in the industry. That kind of a coilege background heips but I do not think anything beats working in a top^^uaiity estabiishment. if you can get an apprenticeship in a four-dr five-star hotei, that is the best- qualification you could ask for.

The restaurant industry is one where you can progress very quickly up the ladder ^
and often people will look to promote from within. Depending on the size of business
you are working for, you could expect a £30,000a-year wage in a small
restaurant, up for £50,000 in a bigger one.
In 50 words sell your profession? The restaurant business is a Job for life
and one which can take you as far as you, want it to. It is also one which can take you all over the world, I have former apprentices of mine who have worked everywhere. It can be whatever you\rant it to be.

’Sswiim her vvay into the British Gas Na tional Age Groups swim-off at Ponds Forge International Arena, Sheffield which starts on Saturday. ' 'Hiis is a top accolade for any up and
coining young swimmer and Emma has sui^assed her own expectations by qualifying for three individual events. Emma
learnt.to swim.at Stonyhurst Pool, arid joined Clitheroe Dolphins I just before turning six.
I Eager; to progress and compete, by I the age of 10,- Emma had made her way I to Preston Swimming Club.
