A larvae cupcake
everal years ago I attended a seminar about insects at Wageningen University & Research. It was the first time I had heard about using insects for food and feed. I was immediately fascinated by the potential applications for these creatures. Afterwards, we were invited to take a bite of an insect snack. I was curi- ous so I tried a cupcake made from larvae and actually it was not so bad; however, I did skip the grass-
hoppers. It was mainly the thought of eating insects what held me back. And that is the point: people in Western countries prefer not to eat insects, because it’s not part of our food culture. This is why in Europe most insects are used in animal feed. The presenter of the seminar I attended years ago was Professor Arnold van Huis. For this edition I had the opportunity to talk to him about eating insects and about how to use this new protein source in animal feed (see page 6). In recent years, a great deal of research has been done on the benefits of insects in feed. There’s still a lot we don’t know and more research will be needed to substantiate the applicability of insects. However, the major challenge facing the insect industry is legislation. In Europe, the use of insect protein is restricted to aqua feed. It seems that such restrictions are consid- erably slowing down the scaling up of this promising new industry.
