SEAMLESS SERVICE


Diespeker delivers bespoke terrazzo for Panzer’s refurbishment.


As Panzer’s Delicatessen approached its 80th anniversary, owner David Josephs embarked on an ambitious refurbishment to mark the occasion – and turned to Diespeker & Co. to bring a new layer of material sophistication to the iconic space.


Established in 1944, Panzer’s is a landmark on London’s food scene. A delicatessen of international renown, it has long served as a local institution with a global following. The 2017 modernisation introduced new elements such as a sushi bar and juice counter, carefully balancing tradition and evolution. For the 2024 project, the aim was to further elevate the interior while respecting the heritage and character of the brand.


Diespeker was commissioned to design, manufacture and install a seamless resin terrazzo that would define the visual and functional foundation of the new interior. Working closely with the client, the team developed a fully bespoke terrazzo mix using pink, cream and green marble chippings set in a warm blush base – a subtle reference to the smoked salmon for which Panzer’s is famed.


Achieving the final design required over 20 iterations, demonstrating the precision and creative input involved in developing a terrazzo tailored to the client’s aesthetic and narrative goals. Once the mix was approved, it was manufactured and installed to a high-performance standard, offering durability in a high-footfall environment while delivering visual impact.


A seamless pour formed the primary flooring, extending across the main retail space and entrance ramp. Brass strips were inset not only for decorative effect but also to enhance slip resistance, a practical consideration in a food retail setting. The Panzer’s brand name was incorporated at the entrance using precision-cut brass inlay, created with waterjet technology for a crisp, clean finish.


The same terrazzo was used to clad the deli and cashier counters, including vertical downstands and worktops. Further brass detailing was introduced to the counter edging

and basket rest areas, creating a consistent, high-quality material language throughout the space.


Additional works included a new external terrazzo plinth and further brass trim elements, reinforcing the continuity between interior and exterior finishes.


Panzer’s remained partially open during the refurbishment, fully reopening in early 2025. The updated interiors were met with acclaim from press and patrons alike, including a full-page feature in the Financial Times praising the quality of materials and attention to detail.


This project exemplifies Diespeker’s commitment to bespoke terrazzo design and craftsmanship, combining aesthetic sensitivity with technical excellence. It also highlights the collaborative approach required to deliver complex, high- profile retail environments, where brand identity, customer experience and materials performance must align seamlessly.
