FATTY CHOICE 1: LEAN OR FATTY?
Every salmon has lean and fatty flesh. The closer to the skin, the fattier it becomes. Fatty slices are more open textured and melt in the mouth, while Lean is drier, slighty smokier and saltier. Think of it like chicken; some have a preference for breast, some for thigh. It’s all down to personal preference.

CHOICE 2: D-CUT OR LATERAL SLICED?
There are two classic methods of carving smoked salm- on. From head to tail for long, lateral slices, or diago- nally down to the skin to produce D-cut slices. Lateral slices have the same flavour profile along the entire slice – some slices will be fatty, some lean – whereas D-cut slices offer all the flavour dynamics in one mouthful.
