½ tsp cumin seeds 1 tbsp ginger paste ½ cup sliced onions 1 tsp red chilli powder 8 - 10 curry leaves Salt to taste


1 tsp garam masala powder


½ cup chopped tomatoes ½ cup chopped carrots ¼ cup chopped potatoes


¼ cup chopped green bell pepper 2 tbsp chopped red bell pepper 1 tsp turmeric powder ½ cup semolina 2 cups oats ½ cup curd


½ cup chopped coriander 1 - 2 tsp lemon juice 2 green chili


For mango salsa • • • • • •


Chopped mango dices Salt to taste


Crushed black pepper to taste 1 green chili


1 - 2 tsp lemon juice 1 tbsp olive oil


For garnish • •


Fried papad as required 1 coriander leaf


Procedure • Heat oil in a pan; add cumin seeds, ginger paste, sliced onions, red chili powder, curry leaves, salt, garam masala powder, chopped tomatoes, chopped carrots, chopped potatoes, chopped green and yellow bell pepper, turmeric powder, semolina, oats , water and let it cook. • Now add curd, chopped coriander, lemon juice and chop


Brown Bread Slices: 2 nos. Butter : as per taste


Butter : 2 – 3 tbsp, to toast the sandwich


Oil : 1 ½ tbsp Butter : 1 tsp


Chopped Garlic : 1 tsp Chopped Onion : 1 ½ tbsp Cumin Seeds : 1 tsp


Chopped Tomatoes : 2 tbsp Salt : to taste


Chopped Ginger Juliennes : 1 ½ tsp


Procedure • To prepare the filling, heat oil. In this add butter, chopped garlic, chopped onions, cumin seeds, chopped tomatoes, salt, ginger juliennes, cumin powder, crushed black pepper and mix well. Chop the blanched spinach leaves and add to the pan. • Add grated cheese to the filling and mix well. • To make the batter; in a bowl add gram flour, chopped coriander, chopped green chillies, turmeric powder, red chilli powder, salt, water and mix well. Keep the batter to rest. • Apply butter to the brown bread slices and add the filling to it. • On a pan add butter; Coat the prepared sandwich in the batter and cook it for 2 to 3 minutes on both the sides. • Remove from pan and cut into triangles. • Serve with tamarind chutney. • For garnish sprinkle lemon juice on the lettuce leaves, arrange coriander on it and place this on the sandwich. Sprinkle red chilli powder.


MASALA OATS
