Doehnel points to organic and local as strong, beneficial factors. “Our newly adapted grains thrive in this maritime climate,” Lyon says. “We breed for genetic resistance to many of the potentially devastating diseases prevalent in our climate and also to develop varieties that will stand up to the harsh winds and rains that may occur.”
