Sheena Hunter cooks up many of her own recipes at the coffee shop at Teddington Stores whilst also preparing lots of lovely food for the deli counter.

This is a very tasty dish that Sheena has created to warm you up on a cold autumnal evening. It is economical to prepare and for all those busy parents, this is an easy one that can sit and cook whilst still getting on with the school pick- ‐up and running around after your children. All the ingredients are sourced locally, which can be found within the store.

( INGREDIENTS SERVES 4:


• 3 oz butter • ½ chopped onion


• 4 Osso Buco (2” thick rounds of veal or beef knuckle)


• Plain Flour for dusting • 5 tbs of dry white wine • 6 fl oz of good beef stock • 8 shallots, chopped • 2 sticks of celery, chopped • 2 large garlic cloves, crushed


• 2 generous tablespoons of tomato purée


• Salt and Pepper


Gremolata: Made by thinly paring a rind of ½ a lemon (or to taste) and a good handful of chopped parsley mixed together.

Melt the butter in a saucepan, add the onion and cook over a low heat stirring occasionally for 5 mins.


Dust the meat knuckles with flour, add to the pan and cook over a high heat, turning until browned. Lower the heat slightly, add seasoning and wine and cook until most of the wine has evaporated. Add the stock and all the vegetables, including the garlic, turning the heat down to a simmer. Leave to lightly simmer for 30 minutes. Add the tomato purée and more stock, if necessary. Transfer to an ovenproof dish and into a pre- ‐heated oven 120 (degrees Celsius) and cook for 3 and ½ hours. Alternatively, you can use a slow cooker for 4 to 5 hours.


Towards the end of the cooking time, add ¾ of the gremolata and stir through. Use the remainder of the gremolata as a garnish on the finished dish.
