Coffee Almond Rolls

Salt a pinch Icing sugar for dusting Method
Step 1: Grease a baking tin with some butter and dust with some flour. Step 2: Take yeast in a bowl. Add a pinch castor sugar. Step 3: Heat milk in a non-stick pan.
Step 4: Add 2-3 tablespoons warm milk to yeast and mix well. Set aside for 2 minutes to activate.
Step 5: Sift flour into another bowl. Add salt and 1tablespoon castor sugar and mix well. Add activated yeast and mix again. Add remaining warm milk and knead into a soft dough. Add 2 tablespoons butter and knead again.
Step 6: Dust the worktop with some flour. Place the dough on it roll out into a ½ inch thick rectangular sheet. Sprinkle coffee powder, remaining castor sugar and almond slivers on the sheet and roll tightly.
Step 7: Discard the edges and cut the roll into 1 inch rolls. Place each roll on the lined baking tin, cover with muslin cloth and set aside to prove for 15-20 minutes.
Step 8: Preheat oven to 180ºC.
Step 9: Brush the rolls with some milk, place the baking tin on a baking tray, place the tray in the preheated oven and bake for 15-20 minutes. Remove from oven, brush the rolls with some butter and set aside to cool.
Step 10: Demould, dust some icing sugar and serve.

Ingredients for Farali Chaat Recipe
1. Purple Yam (kand) peeled, boiled and cut into small cubes 500 grams
2. Ghee 1 tablespoon 3.
Farali chivda as required
4. Cumin seeds 1 teaspoon 5.
Green chillies finely chopped 1-2
6. Fresh coriander leaves chopped, 2 tablespoons + for garnishing
7. Rock salt (sendha namak) to taste 8. Red chilli powder 1 teaspoon + for sprinkling
9. Green chutney as required 10. Sweet date and tamarind chutney as required
Step 3: Put cooked mixture in a serving bowl. Drizzle some green chutney, sweet chutney on top.
Step 4: Sprinkle some chilli powder and put some farali chivda on top.
Step 5: Serve immediately garnished with coriander leaves.
Method
Step 1: Heat ghee in a non- stick pan. Add cumin seeds and sauté for 30 seconds. Add green chillies and sauté for 30 seconds.
Step 2: Add yam, coriander leaves, rock salt and chilli powder, mix and cook for 5 minutes.
