The best turkey of all


Fall in Canada means Thanksgiving and hunt camps. So what’s to eat? There’s really only one answer. You know what it is: Turkey, smoked or grilled. You can cook a whole turkey fairly easily, and outside, too, while the changing leaves


surround you and the warm autumn breezes enhance those mouth-watering cooking smells. Of course, if it rains, or it’s cold – well, never mind. It’s worth doing anyway, just for that


indescribably wonderful taste of moist, tender turkey that is unlike anything you get with the traditional oven (and indoor) method of cooking.


Ingredients: Fresh or thawed turkey, about 12 to 15 pounds ½ cup unsalted butter 1 teaspoon chopped, fresh rosemary 1 teaspoon chopped, fresh thyme One orange (not peeled), cut into quarters olive oil, salt and pepper butcher twine


Disposable foil pans Charcoal Wood chips


Instructions for moist, grilled turkey: For crispy skin, leave the turkey in the refrigerator, uncovered, overnight. Mix room-temperature butter with the rosemary and thyme.
