September's "Recipes to Live By" included a Bacon-Wrapped Stuffed Jalapeño recipe taking 20 minutes in the oven. I based the recipe on verbal suggestions given to me by several different people, many of whom grill their jalapeños.
After fixing these delicious bites of goodness, I realized 20 minutes in the oven is insufficient to thoroughly cook the bacon to my satisfaction. I like mine a little chewy—done, but not brittle.
Perhaps 20 minutes is how long they take to grill? Maybe the size of the jalapeño had something to do with it? The jalapeños I bought were fairly large—around 3-inches or more. Usually, you want more of a bite-sized jalapeño for easy snacking.
I cooked mine for about 40 minutes. Just cook your jalapeños until the bacon is to your liking. Mine were absolutely delicious.
I'll try them on the grill next time and will report back on how long they take to get done. (It's a tough job, but . . .)
