SPICY CHIPOLTE GRILLED SHRIMP Recipe of the Month 1 teaspoon kosher salt


3 cloves garlic, minced


2 chipotle peppers in abobo sauce, chopped 1 lemon, juiced 1 tablespoon olive oil 1 tablespoon paprika 1 teaspoon chopped fresh cilantro (optional)


1/2 teaspoon cracked black pepper 1/4 teaspoon cayenne pepper 2 lbs. uncooked medium shrimp, peeled and deveined


Wooden or metal skewers Prep time: 15 minutes • Cook Time: 5 Minutes • Ready In: 50 minutes • Servings 6 • Submitted by Sue Bee


“Marinated shrimp, grilled on skewers, have th fiery flavors of chipotle chilies, garlic, and red pepper flakes. This is for those who like their grilled shrimp spicy enough to break a sweat.”


1. Mix together the garlic, chipotle peppers, lemon juice, olive oil, paprika, cilantro, kosher salt, black pepper, red pepper flakes, and cayenne pepper in a bowl. Stir in the shrimp, and mix well to thoroughly coat. Marinate for 3 minutes in refrigerator.


2. Preheat an outdoor grill for medium-high heat, and lightly oil the grate. 3. Remove the shrimp from the marinade, and discard excess marinade. Thread about 5 shrimp per skewer, and grill on the preheated grill until the shrimp turn pink and opaque in the center, about 2 minutes per side.

1. The hidden account number must be your own. Find the account number somewhere in the newsletter and compare the number listed in the lower


left corner of your power bill, if same it is your number. 2. Your number must be reported by the 12th of the same month of publication of the newsletter. 3. You must report your own number to the association’s headquarters office in Hollis, Oklahoma by phone, mail or in person. 4. Money will accumulate at the rate of $10.00 per month until the number is found or until January 1, 2012.


Harmon Electric sponsored two employees to serve as volunteers at the 2011 Special Olympics held in Stillwater. Brad Whisenant and Justin Willis had the privilege of providing motivation and encouragement and helping make sure the day was a success!
