What new food items are you offering in your park this season?


Wally Jurusz, Morey's Piers, New Jersey: Generally speaking, we are going to expand our current selection of fresh and locally sourced items because we have seen a yearly increase in guest purchases. Jumbo's will be adding more local seafood, salads and burger options along with beer and wine flights and a locally distilled vodka. Our Taco Joint will be adding rice bowls and local seafood. Breakfast in the Sky [on board our Ferris Wheel] will have a few new offerings. Our picnic and catering area will add a Lobster Bake option, and we will also be expanding our Oktoberfest food & beverage to the pier.


Rick Turner, The Big Sheep, UK:We have put Italian real coffee machines in every kiosk and restaurant. People will pay for high quality coffee at Starbucks, Costa and other places, and now they want quality here too. Quality is our policy, even when delivering fast food. We run two restaurants, a traditional home cooked food restaurant and a fast food outlet in our Ewetopia indoor play, along with a number of seasonal kiosks which are opened or closed depending upon visitor numbers. We change the offering depending upon how busy we are. We are able to prepare more complicated dishes when quiet, and then in the main holidays serve pre-prepared foods like filled rolls, plated meals, hot pies and pasties. Spending on


catering for our park is £4.75 to £5.50 [$6.85/€6.00 to $7.95/€7.00] a head for every man, woman and child; even babies are counted in our spends. That places us in the top 10% of spends in UK parks. There’s a direct correlation between length of stay and spending on food, but customer service is also key. We set daily and weekly staff targets, with bonuses available for exceptional days. Our computerised tills allow all the teams to know exactly how many visitors are on site and spending is going throughout the day.


Sophia Zulli, Hersheypark, USA: As most people know, the town of Hershey is synonymous with chocolate and at Hersheypark chocolate is the favourite flavour. New this year at Simply Chocolate are chocolate bark in an array of mouth-watering flavours including peanut butter, salted caramel and cookies ‘n crème. The chocolate continues as it is dipped onto other great indulgences: cookies, marshmallow treats, brownies, Twizzlers and even bacon. For all the ice cream lovers, new this season are King-Size Shakes at Simply Chocolate and S’Mores, Reese’s and Hershey’s shakes, a 32-ounce indulgence big enough to share. In addition a second Makin’ Whoopie Pies location is opening in The
