China Giant enoki farm
During the 7th Chinese Mushroom Days, I had the chance to visit some of the best and largest mushroom growing operations in Fujian in November, one of which produces enoki on a giant scale.

Accompanied by translator Iris Chen, we visited Fujian Wan- chen Biotechnology Co., Ltd. In Strait (Zhangzhou) Biotechno- logy Industrial Park & Agricultural Silicon Valley. We were wel- comed by General Manager Liqing Wang and Vice Manager Bo Li. Fujian Wanchen Biotechnology is located in Zhangzhou city, Fujian province, on a total area of 36.7 hectares. According to Bo Li, who showed us around, the first stage of the giant farm occupies 6.7 hectares, representing a total investment of 210 million yuan. Here, enokitake or Flammulina velutipes is pro- duced on a very large scale. The yield is about 60 tons of enoki per day (!), with an annual value of production of about 240 million yuan. The production process (bottle cultivation) follows the normal pattern of mixing raw materials, filling bottles, sterilizing, coo-
ling, inoculating, spawning, scratching, growing, harvesting, cooling, packaging. They use liquid spawn because ‘the myce- lium growing speed is very high, the contamination rate is very low and very consistent fruiting bodies are produced’. Some 80% of production is destined for the domestic market (Fujian, Shanghai, Guangdong, Zhejiang, HongKong and other cities), 20% is exported to European countries and Southeast Asia. Unfortunately, most details of the farm, even the number and size of the big growing rooms (60?), could not be disclosed and have to remain a secret, said Bo Li. But as you can see on these pages, the scale, the technological level and very strict hygiene of this enoki farm are very impressive. You need a bike to go from one end of the farm to the other! ◗
