The compost bunkers at Loveday Mushrooms Ltd. in Manitoba, Canada, are shrouded in white. Visibility is very limited when the bunker is being fi lled; everything is blanketed with snow and hidden by swir- ling clouds of mist caused by the temperature difference (up to 120 degrees Celsius) between the warm to hot compost and the extremely low external temperature. The outdoor temperatures are too low in winter to ena- ble outdoor preparation of the compost after the bunker stage, therefore, the compost is fi lled straight from the bunker into the tunnel.
