1 Tbsp fresh ginger root, finely chopped or shredded (or 1 tsp ground)

1 lb

4 Meanwhile, heat a large nonstick sauté pan coated with cooking spray. Add broccoli and sauté for about 5 minutes, until it turns bright green and becomes tender and crispy. Remove broccoli from pan and set aside.

Prep time: 20 minutes Cook time: 20 minutes

Slice tofu into eight pieces. Place on a plate or flat surface covered with three paper towels. Top with four more paper towels. Top with another flat plate or cutting board. Press down evenly and gently to squeeze out moisture. Throw away paper towels. Replace with fresh paper towels and press again. (The more liquid you remove, the more sauce the tofu will absorb.)

2 Place tofu in a bowl just big enough to hold all eight pieces lying on their widest side without overlapping.

3 In a small bowl, combine the soy sauce, sesame oil, brown sugar, and ginger into a marinade, and stir thoroughly. Pour over tofu. Carefully turn the tofu several times to coat well. Set aside.

attainment and other socioeconomic factors put blacks at a much higher risk than whites of developing dementia and other cognitive impairments later in life, says a national study out this week.

aimed at alleviating these factors can help narrow the gap.

disparities in dementia has been identified as a national priority by the National Alzheimer’s Project Act, which was signed into law by President Obama in 2011," Zhenmei Zhang, a sociologist at Michigan State University (MSU) and lead author of the study in a press release.

to achieve this goal, policymakers need to put more emphasis on reducing racial gaps in socioeconomic resources over the entire life course," she went on. "There are multiple windows of opportunity for intervention, and the most promising ones are early life and young adulthood because these are periods that shape individuals’ socioeconomic trajectories into their later life. Reducing black-white disparities in access to quality education and in educational achievement is the first step."

The federally funded study was published online May 31 and will

the MSU study believe that although the exact biological, behavioral and psychosocial mechanisms linking childhood conditions and late-life cognitive impairment remain unclear, two general mechanisms suggest there could well be a link.

One mechanism posits that Powerof Protons

such early life adversities as poverty, hunger, poor nutrition, chronic stress and poor health experienced in early childhood and adolescence, are particularly harmful because they may impair the development of many regions of the brain. The MSU study was done between 1998 and 2010.

Researchers analyzed survey data

from 8,946 participants, all of who were 65 or older in 1998.

Blacks are especially hard hit by

cognitive impairment and dementia, the study points out. Estimates for dementia prevalence rates are substantially higher for blacks than for whites, prompting the Alzheimer’s Association to identify Alzheimer’s disease as an emerging public health crisis among older blacks, according to the study.

Recent studies of dementia care

in the United States for 2009 were as high as $133 billion.
