Vegetarian Recipes Tempeh-Bean Dip


Ingredients: • • • • • •


1 recipe Tempeh- Bean Dip ( see below) 8 ounces tortilla chips


1 recipe Nacho Cheese Sauce ( see below) 1 large tomato, diced ( optional) 1 medium- size avocado ( optional)


Premade salsa or Tomatillo Salsa ( see below)


Tempeh-Bean Dip • • • • • • •


1 (15-ounce) can refried beans ( black or pinto) 4 ounces tempeh, crumbled 1/2 onion, diced


1/2 red bell pepper, seeded and diced 1/2 green bell pepper, seeded and diced 1 teaspoon soy sauce 1/2 cup water

MY NAME IS RED-A CAT’S TALE. All cats dream, and many remember. Some as


philosophers, dreaming of a better world, some as adventurers exploring their own. Some are poets, spinning fantasies of plump mice and round moons, while others are warriors, whose


spirits walk the borders of their turf. Some con- jure like magicians, some pray like high priests, and some are just simple folk, dreaming about dinner and a pet before their nap.


Whether ruled by their hearts, their minds, or


their senses, whether they sleep on soft pillows or hunker in alleyways…all cats dream.


Thus begins the magical tale of Rosie, our her- oine, and her life after abandonment on the


streets of the city, how she was found by a rov- ing band of ferals, how she made a new start in the Green where they lived, how she saved her- self by saving them. But there are many stories in this book, many heroes and many journeys. All of them are magical, and many of them are true.

Nacho Cheese Sauce • • • • • •


Directions: 1.


1/2 cup nutritional yeast


2 tablespoons flour ( we use whole spelt flour) 1 teaspoon onion powder


1 teaspoon chile powder ( preferably chipotle) 1 cup soy milk


1 teaspoon soy sauce Preheat the oven to 425F. Place all the Tempeh-


Bean dip ingredients in a small saucepan over medium heat for 5 minutes, stirring occasionally. Transfer to the bottom of a baking dish or casserole pan. Cover with tortilla chips.


2. In a saute pan, whisk all the Nacho Cheese


Sauce ingredients, turn on the heat to medium and stir for 3 to 4 minutes, or until the mixture begins to thicken ( it will continue to thicken as it sits). Drizzle about half the sauce over the tortilla chips and bake for 5 minutes, or until the cheese sauce has hardened and the chips are starting to brown just a little. Transfer the remainder fo the cheese sauce to a bowl to serve as a dip with the nachos.


3. Remove the nachos from the over and sprinkle


with the diced tomatoes and avocado, if using, Serve the hot nachos, salsa and cheese dip immediatley.
