Yellow Lentil Dahl with fresh Spinach
This is a lovely tasty recipe that can be frozen into portions to make a super healthy and quick tea!
You will need-
500g of yellow lentils/ split peas 1 litre of almond milk 1 white onion large Sunflower oil Curry Leaves Spinach Cherry Tomatoes
For the spice mix- 1 tbsp black peppercorns 1 tbsp of caraway seeds 1 tsp green cardamom seeds 1 tsp saffron threads 2 tsp turmeric
1) Soak 500g of yellow lentils over night
2) Combine peppercorns, caraway and cardamom and blend to a powder using spice grinder or pestle and mortar, then add the turmeric and saffron
3) Finely chop and fry 1 large white onion with 2 curry leaves 4) Drain the lentils, pop in a pan and cover with 1 litre of water. Add the fried onions.
5) Bring to the boil and simmer for 1 hour, add 1 litre of almond milk and leave to simmer until the lentils are falling apart (approx. 1 hour)
6) Add the spices (the further towards the end of cooking, the stronger the taste will be) 7) Add salt to taste and stir through some fresh spinach leaves and chopped cherry tomatoes
Tuna Pasta Bake
Comfort food doesn’t get better than this tuna and broccoli pasta bake!
Ingredients: 2x185g 400g 150g 1
225g 225g 1tbsp 2tbsp 50g
1tbsp cans tuna
can cherry tomatoes broccoli
red pepper pasta
Mascarpone tomato puree breadcrumbs
Cheddar cheese oil
Method: Plunge the broccoli into a pan of boiling water for 3 minutes, cool under cold running water and drain. Cook the pasta as directed on back of pack. Heat the oil in a wok or deep sided frying pan and stir-fry the red pepper until just soft, stir in the Mascarpone, tomato puree and cherry tomatoes, mix well and heat through.
Remove from heat and stir in tuna, broccoli and pasta. Place in a 1½ litre oven proof dish, sprinkle with breadcrumbs and Cheddar cheese and place under a hot grill until golden brown.
Fruit Jelly Ingredients:
500-750ml sweet fruit juice e.g. Raspberry and Cranberry
2 heaped tsp Agar-Agar powder
(A vegetarian alternative to gelatine) Soya cream or topping of your choice Method:
Heat fruit juice until boiling.
Add agar agar and allow to cook for 2-3 minutes.
Pour into a jelly mould and allow to set in the fridge overnight.
Serve with soya cream.
