Cress Related to water cress and mustard. Tangy, peppery


flavor.


Watercress Very strong tasting salad green. Pungent, peppery,


slightly bitter. Renowned for high amounts of vitamins A,C, and E.


Tat soi Also known as rosette bok choy. Spoon shaped,


pebbly leaves. Often cooked and served with ginger soy-sauce-type dressings.


Watercress.


Mâche Lamb’s lettuce. Mildly sweet, oak-leaf-shaped red green. Delicate and tender.


Spinach Best for salads when picked young. Mild tasting. Great with fruits such as strawberries or apples.


Chervil Related to parsley, it has a mild anise flavor that adds a


lift to any salad. One of the ingredients in the French fine herbs. k

rinse in the morning, then soak for another day in lukewarm water. Drain and rinse again. This should be enough to provoke a tiny shoot emerging from the pea. If not, soak them one more night. Plant them in your containers (because they are not going to grow all the way up to produce peas, you can plant them thickly) and cover with a ¼ inch of soil. They should emerge in about two weeks. You can probably get two harvests form your crop.
