GLOSSARY - CHEESE CHEESE GLOSSARY

At Stokeley Barton we are lucky enough to have two of the finest cheese producers in the country only a few miles away. Situated on the banks of the River Dart at Sharpham, Totnes. Debbie Munsford makes a selection of cheeses made with unpasteurised cow’s milk from the herd of Jersey cows on the Sharpham Estate.

Less than a mile from here at Ashprington is Ticklemore Cheese Dairy and one of the country’s most famous blue cheese makers, Robin Congdon, his best known cheese being Beenleigh Blue a Ewe’s milk cheese similar in texture and flavour to the world famous Roquefort made in France. Another blue cheese from the dairy is Harbourne Blue, one of only a few blue goat’s cheeses produced in Europe. Lastly Devon Blue using the cows’ milk of a neighbouring farmer.

There are many other wonderful cheeses made in Devon. Here are some to whet your appetite!

DEVON OKE. Most popular of the traditional cheeses made near Okehampton. A unique full fat semi-hard cheese made to a 17th Century recipe. Creamy with a light buttery taste when young and a full-flavoured mellowness when aged.

MORN DEW. Named after Del-boy Trotter’s bad use of French! The aroma is enticing and the flavour mouth-fillingly creamy with a tang which develops as the cheese matures.

RACHEL. One for those who enjoy a goat’s milk cheese which is not too ‘goaty’! White Lake’s Pete Humphries says that “Rachel was named after a friend of mine - like the cheese she is sweet, curvy and slightly nutty!”
