GLOSSARY - MEAT MEAT GLOSSARY


BEEF BRISKET. Economical joint, usually sold boned and rolled. Great for slow pot-roasting for really tasty results.


BEEF BRAISING STEAK MINCE. Ideal for superior lean lasagne or cottage pie.


BEEF BURGERS. Really meaty, tasty beef burgers made to a special recipe.


BEEF FILLET STEAK. The tenderest lean steak, cooks quickly. A must for that special occasion.


BEEF MINCE. Very versatile, use in cottage pies, pasties, meat pies etc.


OX TONGUE. The butcher will soak the ox tongue in brine. You can then boil and press to use as cold meat.


ROLLED RIB. Full of flavour. Bone removed, meat rolled and tied to produce a superb roasting joint.


LAMB BEST-END CHOPS. Extremely versatile and sweet. Available as small roasting joint or quick-to-cook cutlets.


LAMB BURGERS. Full of flavour with that hint of mint sauce. A real change for the BBQ.


LAMB LEAN MINCE. The very best top quality minced lamb. Ideal for moussaka, shepherd's pie etc.


RACKS OF LAMBS. Extremely versatile. A 3-bone rack is cut between the bones to produce lamb cutlets. Wonderful

LAMB SHANKS. Cook long and slow in the oven until tender and meat falls off the bone. A new favourite on menus in restaurants but so easy to cook at home.


SHOULDER OF LAMB. A wonderful roasting joint from the forequarter with a slightly sweet flavour.


LAMB LOIN CHOPS. Tender and delicious with mint sauce. Grill, roast or BBQ.


BELLY PORK. Pork belly, ideal for roasting, full of really tasty pork flavour, marinated with your own flavours. The butcher will score it for you to produce mouth-watering crackling every time.


PORK CHOPS. Wonderful pork chops, full of flavour. Can be pan fried, grilled, or cooked on the BBQ.


PORK GAMMON STEAKS. Pork green gammon steaks. Delicious with egg and pineapple.


GREEN STREAKY BACON. Thin slices of streaky bacon, very versatile for wrapping over breasts of chicken or those Christmas chipolata sausages.


MINCE PORK. Versatile pork mince using only the leanest pork. Wonderful for meat loaves, pies, pates etc.


PORK TENDERLOIN. Extremely tender. Can be cooked whole or in slices.


PORK SAUSAGES. Very tasty large
