A Knish Worth K’necting With No longer just a side dish


A knish, with its golden flaky pastry and full- flavoured cloud-like filing, is truly a deli- cious treat on its own or served accompany- ing a hearty meal. Tis recipe embraces giſts from the Ontario harvest, such as Jerusalem artichokes (or sunchokes) and pumpkin, that can be used in the place of the more traditional potato filling. Te sweet and earthy flavour of the Jerusalem artichokes, bright colour of the pumpkin and flecks of sage and roasted garlic held by a buttery puff pastry make for a delicious knish. Be adventurous and experiment with


other root vegetables you can cook throughout the cold winter months and support our local farmers at the same time! I love the Jerusalem artichokes, pumpkins and onions grown by Kawartha Ecologi- cal Growers. It always has interesting and delicious vegetables, a hearty selection of freshly milled flours, syrup, jams and other inspiring ingredients.

Roasted Jerusalem Artichoke and Pumpkin Knish Roasted Jerusalem Artichoke and Pumpkin Filling


Makes 8 - 12 pieces Ingredients: 2 bulbs garlic, tops cut off, exposing cloves


¼ cup extra virgin olive oil ½ lb Jerusalem artichokes, peeled and roughly chopped


½ lb sweet pumpkin, roughly chopped, peeled, seeds reserved


2 onions, diced 1 tbsp unsalted butter 3 tbsp fresh sage, roughly chopped 2 tbsp whipping cream Pinch freshly ground nutmeg Kosher salt


½ cup Parmigiano Reggiano cheese, freshly grated


Freshly ground black pepper 1. Preheat oven to 400˚F and line two trays with parchment paper. 2. Place bulbs of garlic on pieces of parch- ment paper sitting on two pieces of tin foil. Drizzle garlic with 1 tablespoon of olive oil and season with salt and pepper. Wrap garlic in parchment paper and tin foil. 3. Place Jerusalem artichokes and pumpkin on separate trays in one even layer. Drizzle with 2 tablespoons of olive oil, season with salt and pepper. Toss with your hands to coat evenly.
