cept me, “Sugar on Snow” - Maple syrup brought to temperature mixed with snow. It kind of reminded me of a cool, maple lol- lipop…Not that I’ve ever had one. Though I didn’t get to

taste any, Kathy also ex- plained to me, as she will explain to others during the Maple Sugaring pro- gram, how to make maple butter. She suggested it as a tasty addition to a ham and cheese sand- wich. After the visit to the Ma-

ple Sugar House I caught up with a group of first and second graders who were being shown histori- cal demonstrations of the making of maple syrup. Remick Farm educator

Susan Junkins, had the group in awe as she stood behind a hollowed out tree trunk into which she fed hot rocks from a small

fire nearby. This was a demonstration of how early Native Americans first boiled the sap. One legend has it that they discovered the wonder of maple syrup after an arrow pierced a tree leak- ing the sap onto the car- cass of a dead deer. Upon cooking the deer they first noticed the unique flavor. (This was one of the legends told to me by Kathy Johnson while in the Maple Sugar House.) Next the group was

shown a large cauldron over a wood fire that was used by early pilgrims as they boiled their sap. Finally they were shown an evaporator used in the 1800s by Doctor Remick himself in the production of the liquid gold. I must admit I learned

as much about the histo- ry of the making of maple syrup as the group did that day. I guess you’re

never too old to learn something new. The group made its way

to the Maple Sugar House where Rick and Kathy awaited. I felt it was too nice a day to head right back to the office, so I strolled the expansive grounds for awhile. Tak- ing a small hike up to some of the tapped maple trees. It was a lot of fun and I thank the folks at the Re- mick Country Doctor Mu- seum and Farm for giving me this early preview. You can come down

with the family and expe- rience this all yourselves on Saturday, March 27th from 11am-3pm. There’ll be wagon rides with Bel- gian horses to take you to and from the Maple Sugar House, craft proj- ects for kids where they can make their own spiles (the things tapped into the maple trees), conces- sions with homemade pancakes, maple baked beans, maple sausage and more. Of course there’ll be maple syrup for sale from the Remick Farm and Turkey Street Maple in Chocorua, and much more. Admission is only $5
