Doing the bulk of preparations the day before, frees you up for your “dish de résistance”— the jumbo shrimp rolls. While they drain and cool a bit, simply toss the salad and assemble the wraps.
The day before:
• Prepare vermicelli; cover and chill • Make dressing for noddles and wraps • Make sweet soy sauce and chill • Prep and chill veggies for wraps and noodles
30 minutes before:
• Wrap Jumbo Shrimp Rolls • Make Pork Wraps
15 minutes before:
• Fry wontons • Toss Thai Noodle Salad
Just before serving:
• Turn on iTunes playlist • Plate the dishes • Give a toast and clink glasses
