Culinary treats and
a local fine wine
growing tradition
Much of the local culinary tradition is drawn from the Roman and Arab influences which
still resonate in the many dishes cooked today with seafood and rice ingredients. Caldero is
a dish of rice with fish stock accompanied by ‘aloh’, a garlic and olive oil sauce. Fish a la sal
is oven baked in salt, and there are king prawns from the nearby Mar Menor. Pastel de
Cierva is a pie filled with egg and meat. Moraga are grilled sardines and Michirones is a
typical local stew of dried beans, spicy sausage, ham and potatoes. Flavours are vibrant
and constituents are fresh from the sea or gathered from local orchards and vineyards.
There are also local cheeses and preserves of jam and marmalade, with sweet pastries to
follow. Excellent wines have been produced since the Romans first planted vines there.
