Tater Taco Casserole
1 pound ground beef 1 pound ground Italian sausage 1 small onion, diced 2 teaspoons minced garlic 28-ounce can crushed tomatoes 6-ounce can tomato paste 8-ounce can tomato sauce 3 cups cottage cheese ½ cup parmesan cheese 1 tablespoon dry oregano 1 tablespoon dry basil 2 eggs, beaten
12-ounce box oven-ready (no-boil) la- sagna noodles 4 cups shredded mozzarella cheese
Preparation instructions: In a large skillet over medium-high heat, cook the ground beef, sausage, onion and garlic until the meat is browned. Drain well. Add the to- matoes, tomato paste, and tomato sauce and simmer for 20 minutes. Meanwhile, in a medium bowl, combine the cottage cheese, parmesan cheese, oregano, basil and eggs. Mix well. To assemble the lasa- gna, spread a thin layer of the meat sauce in the bottom of a foil pan. Top with 4 la- sagna noodles (they may overlap a little), a quarter of the cottage cheese mixture, a quarter of the remaining meat sauce, and a cup of the shredded cheese. Form three more layers of noodles, cottage cheese, meat and shredded cheese. Cover the la- sagna with a foil lid or foil and freeze. Baking instructions: Allow the lasagna to thaw at room temperature for 1 hour. Bake uncovered in a 350°F oven for 30 minutes, or until hot.
Tater Taco Casserole Serves 8
2 pounds ground beef 1 small onion, diced 1-ounce package taco seasoning 2/3 cup water
11-ounce can condensed fi esta nacho cheese soup 15-ounce can corn, drained 32-ounce package frozen tater tots
Preparation instructions: In a large skillet, cook the beef and onion over medium heat until the beef is no longer pink. Drain the grease. Add the taco seasoning and water and simmer for 5 minutes. Stir in the soup and corn. Transfer meat mix- ture to a foil pan. Arrange the tater tots over top. Place the lid on the pan, or cov- er with foil, and freeze. Baking instruc- tions: Allow the casserole to thaw for 1 hour before baking. Preheat the oven to 350°F and bake, uncovered, for 30 to 35 minutes, or until heated through.
