BREADED EGGPLANT OVER ANGEL HAIR PASTA WITH BROCCOLI RABE AND TOMATO
1 large eggplant 1 cup flour 3/4 cup water 1/4 tsp salt 1/4 tsp pepper 2 cup panko bread crumbs avocado oil spray 1 bunch broccoli rabe 1 cup chopped tomatoes 3 cloves garlic half a lemon 1 Tbsp vegan butter Salt, pepper, oregano to taste
• Preheat oven to 400°
• Mix flour, salt & pepper with water to form a batter
• Dip eggplant in batter and coat with panko
• Spray sheet pan with oil and place eggplant in a single layer
VANILLA CUPCAKES WITH STRAWBERRY FROSTING
1 1/4 cup all-purpose flour 3/4 cup brown sugar 1/4 cup cane sugar 1/4 tsp salt 1 tsp baking soda 1/2 Tbsp apple cider vinegar 1/2 cup melted vegan butter 1 cup soy milk 1 Tbsp pure vanilla extract
• Preheat oven to 350° • Mix flour, sugars, baking soda and salt
• Add soy milk, butter, vanilla and apple cider vinegar
• Mix until blended, use fork to break up big lumps and do not overmix
• Pour into cupcake tins with or without wrappers
• Bake for 25 min and cool completely before frosting
Frosting; • 1/2 cup vegan butter • 2 cup powdered sugar • 1 Tbsp pure vanilla extract • 1/2 cup blended strawberries
• Add all ingredients together and mix slow at first, working up to high speed
• Put into piping bag, frost and • Serve with Love!
