HONEYED CHICKEN AND POTATO SALAD with the British Potato Council.
ONE of the best indicators that summer has finally arrived, despite the plummeting tem perature and seemingly inces sant pouring rain, is the appear ance of British new potatoes in
the shops. Their melt-in-the-mouth texture
and unmistakable flavour brings the ' tastebuds to life at the start of the summer harvest. For our Dish of the Week recipe, I
have chosen a honeyed chicken and potato salad to bring a little warmth and sunshine into your meal. Potatoes are not just simply deli
cious, they are versatile too, and suit able for every occasion, from a famijy meal to a dinner party. British new potatoes are grown
and cosseted in some of Britain's warmest are;is, often close to the sea, where winters are mild and early planting is possible. Cheshire, Corn wall, Pembrokeshire, Lincolnshire arc among the most popular varieties
and are delicious cooked in their skins. Add a dash of lemon juice to the cooking water, to help preserve the colour of your now potatoes and you can use the water, with its nutri ents, for making soups or gravy. HONEYED CHICKEN AND POTATO SALAD Ingredients

® 2 tbsps olive oil plus an extra
spoonful for frying © 1/2 lime, juice of (see dressing

; wines. ! Metala is an historic vineyard,
situated a t Langhorno Crook in the Barossa Valley. In 1961 the vino-
i yard was the first winncr'of the Jimmy Watson Trophy, the most i coveted award in Australia, given

gant wine which is a skilful blend of 60% Shiraz with 40% cabernet »uvi- gnon, matured for 15 months in old Frencli and American oak hogsheads so as not to influence the wine with too much oak. The wine is a deep plum red colour and offers complex aromas of liquorice, plum and pep per, with hints of vanilla. On the palate, the wine is richly textured with sweet, fruit flavours, fine tan
nins and excellent length. In e.xceptional vintages, they pro
duce another wine from the Original Plantings Shiraz, from two small vineyards, "Old Black" and "Cellar Black", planted in 1891 and 1894 respectively. Made in a very tradi tional manner, the wine is a dense, dark colour with intense dark berry and blackberry fruit characters sup ported by liquorice and vanilla aro mas; not a cheap wine at £15.89, but well worth it and it will cellar for any thing up to 12 years.

Schryer Band. In view of their effort and the band's reputation, there were too
many empty seats. It was a whistle-stop visit, sand
wiched between London and Carlisle. Widely acclaimed in his lujme coun try, after the hand's opening number,
i t w:is easy to sec why. Dexterity on the fiddle, a wonder
ful wiggle and some fan ta s tic foot tapping, all topped by a captivating smile, won Pie r re Schryor an o th e r 150-plus converts. His band, comprising,keyboard,
guitar, mandolin, bodhran (Irish drum) and banjo, was just as gifted and we were treated to some "dandy tunes, penned by Pierre. Styles ranged from Krench-Canadian, Irish, Scottish and Canadian Old Time Swing, demonstrated in "The Now Canadian WaltJi" in which Pierre

cold.
Leonard, ex-Anam, whoso wonderful ly lilting voice and superb bodhran playing immediately captivated the audience, the duo then gave us - con ception. with; "When Mummy and Daddy Made Me." All magical and memorable stuff, also quite explicit, once you got to grips with the accent! The difficult task ot fronting the
opening concert went to Rebecca Green, a guitarist and folk singer in
her own right whose warm approach quickly won the wide-ranging ages of

1. Combine all the marinade ingre
dients in a large bowl then add the chicken. Cover and refrigerate for at
least one hour. 2. Place the potatoes in a pan of
boiling water, cover and simmer for 20 minutes or until tender. 3. Meanwhile heat the oil for frying
in a large frying pan or wok, add the chicken with the marinade and stir fry for 10-15 minutes or until the chicken is thoroughly cooked. 4. Drain the potatoes then add to
the cooked chicken in the wok and continue to cook for one minute. 5. Place all the dressing ingredi
ents, plus seasoning, into a screw topped jar and shake well. Pour over the salad leaves and tomatoes and serve immediately with the honeyed chicken and potatoes.
