OUR Dish of the Week recipe this week is from an establishment which, like Topsy, has just "growed and growed" over the years. : Mytton Fold Hotel has seen many changes since its inception in 1982, when there were just four bedrooms and a 30-seater restaurant. A warm welcome awaits you at
in great demand as are the facilities for conferences and for the popular golf complex, which is used exten sively by visitors staying at the hotel and members. All these guests need feeding at some stage or other, so you can see Craig and his team are always
busy.
Mytton Fold Hotel, a privately- owned and family-run business. Owners Frank and Lilian Hargreaves are the third generation to own the surrounding 100-acre farm, which now incorporates a challenging 18- hole golf course. Their twin daugh ters, Barbara and Carole, assist in the management and day-to-day run ning of the hotel and son David runs the banqueting and conference cen
tre. : Head chef at the hotel is Mr Craig Mitchell, who has held this position pince leaving Ewood Park two years ago. Craig trained at Accrington and Rossendale College, followed by a spell in a large London hospital, before moving to the Lake District, where he worked for Jennings Brew ery, organising the catering facilities in six or seven of the brewery’s pubs
and hotels. Now he and his small brigade of
chefs work closely together in the kitchen at Mytton Fold, specialising in home-cooked food, using fresh local produce wherever possible, and catering for the public in the restau rant, or large parties of up to 240 in the banqueting suite. As a venue for wedding receptions, Mytton Fold is

Ingredients • 4-8 large cabbage leaves

it in the centre of a leaf and wrap the leaf gently round. If necessary use an extra leaf to ensure that the chicken breast is fully covered. Repeat this with the other chicken breasts. Care fully take the wrapped chicken parcels and lay them gently on top of the simmering mushroom and shallot

1996 at £8.39 has beautiful brilliant greenish glints. The nose is rather complex with reminiscences of bme and maple blossoms, as well as nuts and honey sweets. This wine is round and perfectly balanced, with a blend of
rolle, clairette, semilion and ugmblanc grapes. Mv final choice is Domaine De Farnet Cote de
Provence Rose 1996 at £8.39. It has a clean salmon-pink colour: refined and very elegant, this wine is relatively round and literally explodes on the palate as Reworks. Nuances of apricots and dry fruits are very noticeable. The blend is 30% grenache, 30% cinsault, 20 /o tibouren (grape of the future in Provence) and 20 /» cabernet
sauvignon.

she has come to adore. Helen Dunmore is a writer whose
style is characterised by a lyrical, dreamy intensity seldom seen in British fiction. She beautifully fulfils the highest function of a storyteller - to make you wonder what will hap pen next - while managing to invest the book with careful inevitability. This, coupled with her ability to
leave you wondering even when you have finished the book, makes it one
