OUR recipe for D ish of


the Week, featured on the menu when I dined at The Spread Eagle Hotel, last


week. Guest chef Rowley Leigh


and chef and proprietor of the Spread Eagle, Steven Doherty, together cooked a gourmet meal to delight the most discerning palate. Following an aperitif my


husband I were served a mouthwatering dish of warm goat’s cheese and chicken mousse nibble - absolutely fantastic. This was followed by seared esca­ lope of wild salmon with a gooseberry sauce, which on arrival looked rather strange. The wild salmon, quickly seared to give it that flavoursome look, was accompanied by the goose­ berry sauce, a pale green colour, not reminiscent of gooseberries plucked straight from the bush at all. But, the taste was delicious, both tart and creamy at the


same time, and a perfect


accompaniment to the fish. With the starters we enjoyed a fragrant and fresh Sancerre,


"Les Boffants" 1996. The main course consisted of roast corn-fed Goosnargh duck


with petit pois a la Francaise (won­ derful fresh peas), fondant potatoes and a turnip gratin. The duck was perfectly cooked and served, the breast sliced and the leg whole and accompanied with a delicious sauce. The turnip gratin was both unusual and and so tasty that I will certainly try cooking it at home. With the main course we tried


the recommended Chateau Du Glana, St Julien 1994, a well-bal­ anced, rich and earthy red wine. The finale was baked tamarillos


with home-made vanilla ice cream, with coffee and chocolates to fol­


low. A truly special meal in exquisite .

the film. In Monica Potter we are surely


witnessing a future superstar. Her stunning looks and her ability to be a great comedienne make her a younger, blonder version of Julia Roberts - with considerably


greater acting ability. Fiennes, in his first feature role,


looks set to emulate the success of his gorgeous brother, Ralph. Despite a few rough patches, this


is very funny stuff indeed, showing th a t when it comes to romance with a heart and a sense of humour,
