SALMON AND TOMATO SOUP Ingredients (serves four)

© 1 tbsp olive oil © 1 bunch spring onions, trimmed and chopped © 1 tbsp paprika • half tsp mild chilli powder © 1 pint tomato juice © 1 fish or vegetable stock cube dissolved in a quarter-pint of hot water © 1 x 200g tub low-fat cheese © 3()g small pasta shapes (soup pasta) © salt and freshly ground black pepper • 4 tbsp creme fraiche or soured cream © paprika, for sprinkling © chopped fresh chives, to garnish
