BANANA, APPLE AND GINGER SALAD r
4 bananas.
2 eating; apples. 1 tablespoon preserved ginger and syrup. ;
1 lettuce. ', ■A head of celery.- Juice of V6 lemon. Salad cream..
,, Peel and core the apples!
and cut each into three thick rounds, laying them in lemon-juice to preserve the colour. Sl ice the ; bananas and chop the cel ery and ginger, mixing them with the ginger . and syrup, lemon juice and salad cream. Wash , and shred the out- '
side leaves of the lettuce.' Lay the slices of apple on them and heap them with the banana mixture. Deco rate with small lettuce . leaves.
.. BRAZILIAN BANANAS
4 bananas. 1 tablespoon rum.
. 1 dessertspoon instant coffee. 1 dessertspoon caster sugar. 4 fl. oz. double cream.
’ Few almonds. Peel the bananas, slice,
thickly into a serving dish o r small di shes and sprinkle over with rum. Dissolve the coffee in one or two tablespoons of boil ing water, add caster sugar and leave until cold.
Whip the cream and add
the coffee mixture.. Cover the bananas with the cof fee-flavoured cream, scat ter a few browned flaked almonds on top and serve chilled.
CARIBBEAN COCKTAIL

CHOCOLATE AND BANANA TRIFLE
4 sponge-cakes (halved). Small quantity lemon curd.
2 large bananas (sliced). 1 tablespoon sherry
' (optional). ’A pint milk. 3 large egg yolks. 4oz. dark chocolate. Spread spl it sponge cakes with lemon curd.
■ Place half of them curd side up in serving dish, c o v e r with half the bananas, then the rest of the sponge c a k e s a n d another layer of banana. Pour sherry over. •
Boil:milk, allow to cool
slightly and pour onto beaten egg yolks. Return
ingredients to pan, add chocolate and stir over gentle heat until well blended, but do not allow to boil.

has thickened, pour it over, ingredients in dish. Can be decorated when cold with whipped cream if desired. Serves 6. ■
