Children’s cookery author Annabel Karmel MBE, can relate. “My fussy son could spot what I thought was a ‘hidden’ veggie a mile off! I started to blend sauces containing different vegetables — what they can’t see, they can’t pick out.” Karmel’s recipes encourage parents
to try new things. “Add carrot to burgers, or blitz spinach into a hummus,” she suggests. Making vegetables more desirable
by changing their appearances is another way of encouraging children to branch out. Karmel suggests using a spiralizer to make courgetti spaghetti or cookie cutters to create shapes from squash slices, which can be roasted in the oven for a side. “Sometimes it’s about preparing
their favourite foods in different ways,” adds Karmel. “Perhaps they enjoy pizza, so why not task them with topping a base with lots of colourful ingredients? Or is fish and chips their favourite? If so, then try making your own with nutritious sweet potato chips.”

ANNABEL KARMEL’S BERRY & BEETROOT LOLLIES MAKES: SIX LOLLIES
Ingredients 100g cooked beetroot 50g blueberries 75g strawberries, chopped 2 tbsp apple juice
Method 1. Measure the ingredients into a jug, then blend until completely smooth. 2. Pour into six small ice lolly moulds. 3. Freeze for 4-6 hours.
ANNABEL KARMEL’S CARROT & COURGETTE FRITTERS MAKES: 20 FRITTERS

Ingredients 175g courgette, grated 100g carrot, peeled and grated 70g halloumi cheese, grated 25g cheddar cheese, grated 2 eggs, beaten 4 tbsp plain flour 2 tsp thyme, chopped 1 tbsp basil, chopped

Method 1. Pre heat the oven to 180C Fan. 2. Line a baking sheet with non-stick baking paper. 3. Put the courgette and carrot into a clean tea towel and gently squeeze out as much liquid as possible. Place the vegetables into a bowl with the remaining ingredients. 4. Mix well, then spoon about 20 tablespoons onto the baking sheet. 5. Bake for about 15 to 20 minutes until lightly set and golden brown.
ANNABEL KARMEL’S HIDDEN VEG QUESADILLAS TWO LARGE TORTILLAS
Ingredients 75g broccoli florets 1 tbsp sunflower oil ½ red onion, chopped ½ red pepper, diced 1 tomato, chopped 1 clove garlic, crushed 30g cheddar cheese, grated 30g mozzarella, grated 4 large tortilla wraps
Method 1. Cook the broccoli in a steamer (if you don’t have a steamer, you can use a heat-safe colander and place it inside a large, lidded pot for the same effect) until tender. Drain, cool and chop. 2. Heat the oil in a saucepan. Add the onion and pepper and fry until soft. Add the tomato and garlic and fry until the tomato has softened. Finally, add the broccoli. 3. Carefully spoon the mixture onto two wraps and spread out. Sprinkle with the cheeses and place the remaining two wraps on top and press down firmly. 4. Heat a little oil in a large frying pan, add one wrap and fry for 2 minutes on both sides until golden, crisp and the cheese has melted. 5. Repeat with the remaining quesadilla. 6. Slice into wedges.
