CHRISTMAS HAM A FINE CENTREPIECE


A fine roast ham is one of the centrepieces of a great Christmas feast, guaranteed to not only look fantastic but to carry on feeding those hungry mouths for the days to come! Here, Ross Williams, Head Chef at the Kilpeck Inn, shares his recipe for the perfect festive ham. Ross’s top tip is to buy the best pork you can afford (organic, free range or outdoor reared).


INGREDIENTS (SERVES 8) • One boneless cured gammon joint (about 2kg) • 2 large onions, cut roughly into 6 • 2 leeks, roughly chopped • 2 bay leaves


• 6 cloves • 12 black peppercorns


• Peel of one small orange, cut into strips For the glaze: • 2-3 tbsp English mustard • 5-6 tbsp soft brown sugar • Cloves

METHOD: Place the ham in a large stockpot with the other ingredients and cover with cold water. Slowly bring to the boil then simmer for around two hours or until the internal temperature of the ham reaches 68C. Carefully lift the ham out of the water and allow to cool slightly. Cut off the skin, leaving as much fat beneath as possible. Score this in a diamond pattern and place the ham in a baking tray lined with foil or baking parchment. Smear the fat with the mustard then rub in the brown sugar. Stud with cloves and put into a hot oven (preheated to
