‘Cheesecake’ Cupcakes Makes: 12 cupcakes, Prep Tim:e 10 min; Cook Time: 2 Hours.
Note: These cupcakes should be kept in the freezer and thawed about 10 minutes before serving.
INGREDIENTS •
1 1/2 cups cashews, soaked overnight, rinsed, and drained
• Juice of one lemon • •
1/3 cup coconut oil 1/2 cup nondairy milk (coconut milk works best!)
• 1/2 cup agave nectar or maple syrup • •
1/3 cup peanut butter
12 sandwich cookies (try 365 Everyday Value Sandwich Cremes!)

this initiative, we see a reduction in the incidence of both cervical and breast cancer and provide women with education
concerning their unique
risks. As the sole See, Test and Treat program hosted in the Commonwealth of Virginia this year, it is vital to the positive healthcare
outcomes for Hampton Roads’ underserved women.”
See, Test and Treat will provide women with a free Pap test with same-day results and screening mammogram prompt
with same-day results. Sentara or Healthcare
will provide on-site mammograms, via its mobile unit, and will have staff on site to provide interactive educational information. In addition, HRCHC will provide children’s activities. More than 12,000 women will be diagnosed with cervical cancer this year, however, with screening tests, such as the Pap test and HPV test, cervical cancer is now one of the most preventable cancers.
INSTRUCTIONS
1. Combine the cashews, lemon juice, coconut oil, nondairy milk, agave nectar, and peanut butter together in a blender and blend until smooth.
2. Line a muffin pan with cupcake liners and place a sandwich cookie in each.
3. Pour the cashew mixture into the cupcake liners, distribut- ing evenly.
4. Freeze for at least 2 hours before serving.
