Located a short walk from the picturesque village of Broadway, Farncombe Estate is a 400-acre patchwork of rolling fields and sprawling woodland and home of the award-winning Dormy House, Foxhill Manor and The Fish Hotel. Dotted amidst this bucolic playground, the three much-loved properties have established themselves as local favourites and serve up a dose of quintessential rural charm with unmistakable Danish flair, yet artfully manage to retain an individual character of their own.


This is no more visible than in newest-on-the-block, The Fish, which reinvigorated Cotswold accommodation when it opened in June 2015. Now, this back-to-nature bolthole is currently undergoing an extensive, four-million-pound renovation and will reopen in March with a new seafood inspired restaurant by Chef Martin Burge, entirely revamped interiors and a renovated six-bedroom farmhouse, and will be followed by three luxury treehouses, ten new bedrooms in the Coach House and five hideaway huts over the course of the summer.


Offering gourmet dining with a twist, Hook will launch on the 6 March following a million-pound redevelopment. The vision of two-Michelin star chef Martin Burge, Farncombe Estate’s Culinary Director, the new restaurant is a laid-back but luxurious celebration of responsibly sourced seafood with a menu featuring the finest, freshest fish. Signature dishes include Porthilly rock oysters, poached blue chip salmon, whole baked seabass and lobster thermidor. The all-day restaurant will welcome both hotel guests and non-residents, with outdoor seating on the terrace for alfresco dining in the summer months. Combining the sophistication and refinement synonymous with Burge’s gastronomy and the warmth and welcoming rusticity that has made The Fish a firm favourite over the last five years, the new-look restaurant will feature an open kitchen, 360-fire and cosy corners. Honouring the owners’ Danish heritage, the hygge design will fuse neutral interiors, cosy textiles and clean lines.
