Te taste that satisfies body and soul I
find my mind drifting off to another place, another time. I longed for the taste of Italy the other day and so I made
Pesto • 1 cup packed fresh parsley finely chopped • ¼ cup olive oil • 2 tbsp pine nuts or walnuts • 1 clove garlic, minced • ¼ cup freshly grated Parmesan cheese, • Salt and pepper to taste
Note: You can substitute basil for parsley; reducing oil to 2 tbsp.
Italian Wedding Soup! In a large saucepan over medium heat
place bacon and cook for several min- utes, add garlic and onions and cook for five minutes or until the onions are clear. Add beans and stock; bring to boil. With angled knife, finely chop carrots
and celery, and finely shred cabbage. Add to pot with tomatoes, bay leaf, basil,
oregano, salt and pepper; bring back to boil. Reduce heat and simmer for 20 minutes. Meanwhile, peel and cube potatoes;
add to pot with the pasta. Simmer, cov- ered, for 10 to 15 minutes or until potatoes are tender. Discard bay leaf. Taste and adjust seasonings.
Pesto: In food processor, puree parsley,
oil and pine nuts until smooth; transfer to bowl. Stir in garlic and Parmesan. Season with salt and pepper to taste. To serve ladle into soup bowls; top each
with 1 tbsp pesto. Enjoy. Ian Leatt is President of Pegasus Pub-

with the purchase of your first home. This month I will be giving five reasons why you should consult with a mort- gage professional: 1. Te advice of a mortgage
professional is FREE. One of the most frequently asked questions of me is whether my services cost anything. No, my services are free! Imagine receiving a second opinion at no cost that could potentially save you thousands of dol- lars over the lifetime of your mortgage. 2. We have better products

and lower rates. We have ac- cess to many different lenders across
ence. Purchasing a home can be one of the most stressful times of your life. Choosing a mortgage professional means you can pick up the phone at any time to ask a ques- tion or make an appointment whenever it is most conveni- ent. Evenings, weekends, and holidays. 4. Lifetime relationship. As
a mortgage professional I want to start building a lifetime relationship with my clients starting with the first phone
call and continuing long after the mort-
gage transaction is complete. Most of my clients tell me it’s nice to have the same face to come back to should any questions arise. 5. Accurate pre-approvals and edu-
cation. When I provide you with a pre- approval you can be confident that it is accurate because I will collect all the necessary documentation up front. I will also do a credit check before providing you with a pre-approval so we can ensure there are no surprises once you have an accepted offer to purchase. I will also educate you on the different mortgage options available
to suit your specific financing needs. These are just a few reasons why you
should use a mortgage professional. Let’s put it this way… when you go shopping for shoes would you go into the store that has one pair of shoes that aren't in your size or would you go into the store that has many pairs of shoes in a variety of colours and sizes? I hope this can help answer the question “why use a mortgage profes- sional?”. If you would like a second opinion or have any questions at all, please don’t hesitate to contact me.
