Fes Cooking Adventure, Morocco For those who want to widen the scope of their culinary adventures, an increasingly popular destination for foodie vacations is Morocco. In fact, the first culinary tours to Morocco were led by cookbook author Kitty Morse, a Navy spouse, in the early 1980s, and the culinary tour industry there has been growing ever since. The Fes Cooking Adventure com- bines access to local cooking with guided sightseeing tours. The tour spans a week and includes driving tours of the Middle and High Atlas Mountains, a four-wheel-drive trip across the sand dunes of the Sahara, and exploration of the film settings for Lawrence of Arabia, Jesus of Nazareth, and The Gladiator, as well as meals at local restaurants and cafés serving up traditional Moroccan fare. Travelers can elect to take hands-


on Moroccan cooking classes while they’re in Fes, which is known as the capital of Moroccan cooking. Classes are held at Riad Tafilalet, a stunning traditional Moroccan home now op- erating as an inn. Local chef Lachen Beqqi provides instruction in every- thing from making a simple chouk- chouka salad to vegetable tagines. Classes begin with a grocery trip to the local souk, where students will learn how to select fresh ingredients. They also include lessons in local food etiquette. For example, guests to a Moroccan home always are served mint tea, and instead of forks and knives, Moroccans use small bread wedges to scoop up food.
