When the dogwoods bloom. . .


Crappie is oŌ en considered the king of fresh water eaƟ ng. It should be no surprise that REC has quite a few avid ⇒ shermen and women. One of the most commiƩ ed and successful, however, is Herb Morris.


Herb enjoys ⇒ shing to relax and takes advantage of his bounty when it comes to supper Ɵ me. His best ⇒ shing partner, granddaughter Lizzie, is pictured below helping Papa haul in her share of the catch.


When it comes to preparing your ⇒ sh, Herb says crappie is best when you “Keep it simple. Let the ⇒ sh be the star of your dinner.” Herb’s favorites with fresh ⇒ sh are fried potatoes, some spicy cornbread, and a fresh, in-season side such as corn on the cob or sliced, ripe tomatoes.


2 pounds ⇒ sh ⇒ llets 1∨2 cup all-purpose ⇓ our 1∨2 cup milk 1 egg 1∨2 teaspoon salt 1∨2 teaspoon paprika


Southern Fried Fish


1∨4 teaspoon cayenne pepper 1∨4 teaspoon oregano leaves 1∨2 cup yellow cornmeal 1∨2 cup vegetable oil


In a ⇓ at dish sƟ r together all ingredients except cornmeal, ⇒ sh and oil. On a separate ⇓ at dish place cornmeal. Dip ⇒ sh into baƩ er, then coat both sides of ⇒ sh with cornmeal.


In a large, cast iron skiƩ le heat oil to 350 degrees F. Place 3 or 4 ⇒ sh ⇒ llets in hot oil. Cook


over medium heat unƟ l golden brown. Turn and conƟ nue cooking unƟ l golden brown and ⇒ sh ⇓ akes with a fork. Repeat with remaining ⇒ sh; place fried ⇒ sh on a paper towel to drain any excess oil.


Simple Baked Fish Vegetable cooking spray 1 pound ⇒ sh ⇒ llets 1/3 cup milk


1/4 cup all-purpose ⇓ our 2 cups seasoned croutons, ⇒ nely crushed Tartar sauce or lemon wedges


Preheat oven to 450 degrees F. Spray baking sheet with vegetable cooking spray.


Dip ⇒ sh into milk. Coat with ⇓ our and then dip in milk, again. Coat with crushed croutons.


Place ⇒ sh on baking sheet. Spray ⇒ sh lightly with vegetable cooking spray.


Bake for 10 minutes or unƟ l ⇒ sh is done. Serve with tartar sauce or lemons.
