Co-op Connections Big C’s Café, Elkhart, Kansas

A big cheeseburger with crinkle cut fries and a free drink from Big C’s Café in Elkhart, Kansas, is a great deal and a good meal for TCEC members who show their card before ordering.

Big C’s Cafe is locally owned and managed by Chad and Brenda Herron. The business was started by Brenda’s parents Karla and Jerry Wadlington in 2005 before Brenda and her husband bought it from them in 2008.

“My parents built it from the ground up,” Brenda Herron said. “They had never worked in a restaurant. My mother had never punched a time clock. I moved home and worked for them a while before my husband and I bought it.” Brenda Herron went on to explain her approach to customer service. “We treat people like we want to be treated,” she said. “We want to make

our customers happy so if something’s wrong we want to know it. We are here to support our community.” Brenda said the restaurant has daily lunch specials. On Tuesday it’s enchiladas, Wednesday’s varies, Thursday’s varies but it is usually a Mexican dish, Friday is always FDWÀ VK 2Q )ULGD\ HYHQLQJV WKH\ serve shrimp skewers and coconut shrimp. Saturday’s special varies. On Sunday they always serve a home cooked meal with a dessert. The Café is closed on Mondays.
