Tried & tested toddler recipe ideas...
Caroline from Your Undercover Cook’s daughter always hated mushed up baby food and ate nothing but yoghurt and bananas until she was ready for finger food. Once finger food became an option, meal times become fun rather than stressful! She loved both the below:
Crunchy chicken...
Chop an organic chicken breast into strips. Have ready a bowl of flour, a bowl in which you
have beaten an egg and a bowl of either crunched up cornflakes or panko breadcrumbs (you can buy form most supermarkets). Dip the chicken strips into
the flour, followed by the egg, followed by Small Steps 28
the cornflakes or breadcrumbs. Fry in a little butter until brown on each side and then finish cooking in a hot oven (180°c) for about 5-10 minutes until cooked through.
Caroline’s kids loved having these chicken strips with the below:
Tortilla crisps with dippers...
Preheat the oven to 180°c. Cut a flour tortilla into quarters and then in half again to make 8 triangles. Lay them
on a baking tray. Brush with some butter and then bake for 10-12 minutes until crisp and golden. Leave to cool.
Serve with some mashed avocado or homemade houmous - whizz up in a food processor 400g can of chick peas, 3 tbsp olive oil (may need more), 2 tbsp tahini paste, juice of 1/2 lemon.
