Exquisite Carrot Cake
to bake with kids! This was the time I fell in love with baking! Years ago I found this recipe in a ‘bake with kids’ book and decided to give it a go. It was an instant hit in my house and it’s now one of the most requested cakes at BakeaCake4Me.
Ingredients for the cake 200g carrots, peeled 175g soft brown sugar 200g self-raising flour 1 tsp bicarbonate of soda 2 tsp cinnamon zest 1 orange 2 eggs
100ml sunflower oil nuts and raisins (optional)
Ingredients the cream cheese frosting 50g softened butter 75g icing sugar 200g soft cheese sprinkles (optional)
Method – Cake • Line a 2 x 8-inch cake pans with baking parchment. Turn the oven on to 180ºC/160ºC fan/gas 4.
• Grate the carrots on the fine side of the grater, then tip them into a large bowl.
• Get your kids to add the sugar, sifted flour, bicarb and cinnamon on top of the carrot, then add the orange zest, nuts crushed in small pieces and raisins if you like, mix everything around a bit.
• Break the eggs into a bowl and add the oil. Mix everything together well. Scoop the cake mix into your tins and level the top.
• Bake for 30 minutes; or until the cake is cooked.
Method - Icing • To make the icing, mix the butter and icing sugar together, then stir in the soft cheese until smooth.
• When the cakes are cool, spread the top of one cake with half of the frosting and place the second cake on top. Spread the remaining frosting on top and decorate with sprinkles or nuts, if you like.

Tuna Pasta Bake Ingredients:
2x185g cans tuna, drained 400g 150g 1

1tbsp Method:
Plunge the broccoli into a pan of boiling water for 3 minutes, cool under cold running water and drain.
Cook the pasta as directed on back of pack. Heat the oil in a wok or deep sided frying pan and stir-fry the red pepper until just soft, stir in the Mascarpone, tomato puree and cherry tomatoes, mix well and heat through.
Remove from heat and stir in tuna, broccoli and pasta. Place in a 1½ litre oven proof dish, sprinkle with breadcrumbs and Cheddar cheese and place under a hot grill until golden brown.
