3 clever uses for leftover coconut milk
Recipe only calls for half a can? Savor more creamy goodness with these three creative ideas. FREEZE in an ice-cube tray; drop three to four coconut cubes into chai tea for a smooth, cool treat. MIX coconut milk with minced garlic, grated ginger, lime juice, and crushed red pepper flakes. Use as a marinade for chicken or fish. DILUTE with a bit of water; substitute for liquid in pancake or waffle batter.

Good news for vegans Fish oil isn’t the only way to improve heart health: Research published in The American Journal of Clinical Nutrition found that those who increased alpha-linolenic acid (ALA) intake by as little as 1 gram per day reduced their cardiovascular disease risk by 10 percent. ALA is found in plant-based sources such as walnuts, flaxseed, and hempseed (to learn more, see page 56). Eat a handful of walnuts (about ten) per day, or drizzle ALA-rich hempseed oil over salads for benefits.
