restaurant who wants to talk hand dryers or front grills, how they can do this or that – and they genuinely mean it.’ Nando’s uses heat recovery units


behind the front grill to heat the hot water for its restaurants, and LED lighting now goes into all new outlets. In terms of its heating, ventilation


and air conditioning systems, Nando’s restaurants generally have split air conditioning units and electric air heater batteries, as well as extraction fans. In its kitchens it uses gas front grills, electric


back grills, gas steam ovens, electric fryers, microwave ovens and coffee machines. And in terms of its refrigeration needs, Nando’s installs walk-in fridges and freezers, as well as under-counter fridges and freezers. There are no ground source heat pumps in


use at any of its establishments as yet because the sites are not appropriate, but ‘We will have one, I’m determined’, states Allen.


Systems and technologies that have not


been used yet include photovoltaics and a green roof, but in many instances the chain doesn’t own the roof anyway. Waste oil recycling was also found to be unsuitable because Nando’s does not use enough oil. The next goal for Allen is to recycle as


much of their waste as possible, but there are no plans to introduce waste water recycling. ‘Water usage is very low,’ justifi es Allen. ‘We already have automatic fl ushes, systemisers, and reducers in taps and automatic taps. That’s an ongoing thing.’ Allen believes the key to the chain’s success


is the amount of collaboration involved, from the top of the company to the bottom. Members of the board hear direct from staff representatives at each individual restaurant about how things are being run and why, through the Nandoca forums. Allen concludes: ‘I couldn’t do it without


buy-in from the board and everyone else around me. Everybody is willing to listen.’
