Dear Smokehouse Friends, It’s wintertime here in the Ozarks. As we’ve done for the last 60 years, it’s “Curing” time.
Burgers’ Smokehouse is the nation’s leader in old fashioned Country Cured Hams. This style of ham requires patient aging -- as long as 9 months with our Attic Aged Hams. With the time it takes to properly age an authentic Country Cured Ham, we can have as many as 250,000 hams in our plant at any given time.
Many folks are unfamiliar with this southern delicacy. Today’s grocery stores are filled with hams, but they’re no comparison. Most are bland and full of water. In contrast, country ham is aged to develop flavor. They actually shrink nearly 20%. This combination of curing, aging, and natural smoke give Burgers’ Country Hams a robust, complex flavor.
So if you haven’t tried one, here’s a couple suggestions. Item B2331 on pg. 9 is a fully cooked and sliced center portion -- the ultimate in convenience. Another suggestion, Item B276 on pg.18. This ham is fully cooked and also spiral sliced. It’s the perfect centerpiece to your special dinner or celebration.
