Freeze-dried food is an ideal way for outdoor adventurers to get a quick and easy hot meal. We find out about Kudrati Naturally’s range of freeze-dried curries and what they offer the body.

reeze-dried food is an ideal way for those venturing into the outdoors to make sure they have a quick and easy hot meal at the end of a day on their feet. There are a number of different
options on the market, such as the MX3 Aventure range that has been designed to take into account nutrition and ease of digestion, coupled with flavour, or the Adventure Food collection, which covers rice dishes through to hotpot. Kudrati Naturally started off in 2009 as a way for Indian student Shikha Saraf, while studying in the UK, to enjoy home cooked meals that were both tasty and nutritious but suited her student budget. Her parents would prepare large portions of her favourite meals, which were then freeze-dried and
shipped 3,000 miles back to the UK so they could be eaten throughout the term. This act of parental love blossomed into a
business that outdoor distributor Rosker and Saraf Foods developed to provide outdoor enthusiasts and adventurers with similarly healthy and natural tasting instant meals. “At Kudrati we understand that every outdoor enthusiast enjoys different foods, which is why we offer a wide selection of meals helping to fuel your journey,” reads the statement on the back of each pack. Saraf Foods uses state-of-the-art freeze-drying
technology and sources ingredients from indigenous small farms in surrounding Gujarat, North West India to produce the range. And with curry prevailing as one of the UK’s favourite
dishes, it has proved to be a fruitful decision. The current range offered to the market
includes five different curry dishes. There’s Dhal Makhani, a medium heat black lentil Punjabi speciality; Dhal Tadka, a mild yellow lentil curry; Palak Makai Mutter, a richly flavoured, medium heat curry with spinach, peas and sweetcorn; Pao Bhaji, a spicy, mixed vegetable curry normally enjoyed as a street food speciality in Mumbai; and Pyaz Masala, a tomato and onion, medium heat curry. Each meal is packaged in a medium sized foil bag with a 75g dry weight. They are prepared in
the bag by adding hot water and allowing them
to stand for a few minutes. This typically provides over 600 calories per serving
when eaten with a 100g naan. In addition, they are all free from artificial preservatives
and flavouring. Dhal Makhani, for instance, provides around 320 calories when made up to a 375g weight, with nearly 17g of protein and over 8g of fat. Palak Makai Mutter provides slightly fewer calories, a
similar protein level and over a gram more of fat. The range of traditional Indian
vegetarian meals can be eaten on their own or with naan bread, rice, potatoes,
oat cakes or even pasta. The more adventurous can also add their own
additional ingredients from home or when foraging along their trekking route. For instance, the Pyaz Masala can be used as a
marinade for meat and fish to provide a more substantial meal.
