PADDLING GOURMET BY VINCE PAQUOT Cookie Monster


PEANUT BUTTER DROPS ¼ cup butter or margarine ¼ cup milk


¾ cup + 2 tbsp sugar


Okay, so Oreos pack pretty easily for trip. But homemade cookies provide the extra pleasure of making and enjoying them fresh off the pan. Nothing puts smiles on faces quicker than a warm, still-gooey cookie on a cold, wet or windy day. All you need for these three easy recipes is a mixing bowl and a saucepan. No baking required.


¼ cup cocoa 1 ½ cups rolled oats ¼ cup smooth peanut butter


Combine butter and milk in a pot and melt over medium heat. Mix in sugar and cocoa and boil for two to three minutes, until mixture begins to thicken. Add rolled oats and peanut butter and mix well. Spoon dough onto sheet and allow to set before serving. Makes a dozen.


GLAZED COFFEE BALLS BALLS


2 cups graham crumbs ½ cup icing sugar


½ cup pecans, finely chopped


½ cup hot water


2 tsp instant coffee 2 tbsp butter or margarine


GLAZE


1 cup icing sugar 1 tbsp butter or margarine 2 tbsp prepared coffee


Pre-mix dry ingredients for balls in a Ziploc bag. Bring the water to a boil, add butter and instant coffee and stir until melted. Pour gradu- ally into dry mixture, stirring well, until dough is firm enough to form balls. Make 12 balls and set aside. Combine icing sugar, melted butter and coffee. Dip balls in glaze and let dry before serving.


HIGH HATS


8 thin chocolate or digestive cookies


4 large marshmallows


½ cup chocolate chips 1 tbsp paraffin wax 1 tbsp butter or margarine


Place cookies on a flat surface (a camp griddle or cutting board works well). Cut marshmallows in half and place halves on cookie centers. In a saucepan over low heat, melt chocolate chips, wax and butter. Stir until creamy, and then spoon over marshmallows and cookies. Let chocolate harden before serving.
