The dinner started with the superb natural acidity of Carmen Reserva Sauvignon Blanc 2007 paired with Thai Style Tuna Carpaccio with Mixed Sprout and Pomelo. Carmen Reserva Chardonnay from Casablanca Valley has great structure and complexity. It has elegant nose of white peaches, green melon, figs, pastry cream and mandarin notes. This bright golden yellow colour wine perfectly matched with Wild River Prawn and Wild Mush- room Chowder.

with Spinach and Corn. The Carmen Carmenere- Cabernet Sauvignon Reserva has exotic aromas of menthol and oregano with rich black fruit flavors and notes of tobacco in the finish along with round tannins, combined well with Braised Wild Duck al Caparas with Wild Rice. For the finale, everyone was excited with the rich and long vibrant characteristics of Carmen Winemaker’s Reserve Red. The nose is elegant and fresh with layers of different aromas. The tannins feel sweet and velvety but also firm and persistent. The gorgeous blend of Cabernet Sauvignon, Carmenere, Syrah, Merlot, Petite Sirah has great texture and complexity with Wild Boar Sausage and Meat Stew and Apple Onion Bread.
The exemplary varieties of Carmen Wines plus the captivating and exotic menu prepared by Chef Gene Gonzalez made an impres- sive and unforgettable night to all the guests. Bravo Gene.
